
Who doesn’t love a bowl of classic guacamole and chips! I personally love avocados and could eat them every day. Back home, my mom has an avocado tree that once belonged to my grandfather. He loved nature and all his plants. Whenever I go back to Ecuador I get unlimited access to avocados but here I have learned to REALLY appreciate every good avocado I eat. There have been so many times that I’ve bought an avocado that is hard as a rock and the next time I touch it, it is as soft as jelly and it has spoiled. It is such a frustrating feeling! So… whenever your avocados are perfectly ripe, you gotta use them and enjoy them! 🙂
Ingredients
- 2 avocados
- ¼ cup tomato diced
- 1 tbs jalapeno pepper diced
- ¼ red onion diced (about 2 tbs)
- 2-3 tbsp chopped cilantro
- 2 tsp salt
- Juice from 6 mini limes (Mexican key limes) or 2 large limes.

Directions
1. Combine the tomatoes, jalapeno pepper, red onion, cilantro, salt, and lime juice in a bowl

2. Add the avocados and mash them with a whisk until you reach your desired consistency.

3. Enjoy with chips!!!
